Beautiful aroma, rich sweet taste

This is also a new sake brewed with rice grown in 2022 and freshly squeezed at the brewery.

This is the third time I’ve had sake from Koganei Sake Brewery, and all of them have been my favorites. And every time I feel new learning and comfortable happy time.

The first one, “NamaNama”, surprised me that Koganei Brewery makes not only Japanese sake, but also milin, shochu, beer, and gin.
I learned that they are a by-product brewery that transforms the by-products of sake brewing into various products.

The second one, “Junmai Gingjo”, my interest in the manufacturing process of familiar seasonings such as milin and vinegar and surprised me with saccharification fermentation and acetic acid fermentation.

Back from exploring new year of brewery

My parents made me phone call “Come down to taste fresh brewed sake!”

Why not?

It was a fun time, comparing and appraisal the taste of each sake by amateur family talk.
