Miyoshigiku brewery, Tokushima prefecture
This is sweet.
I was thinking that sake brewing was unfamiliar in Tokushima Prefecture because of its warm climate area.
But I found out that there are 21 breweries registered with the Tokushima Prefecture Sake Brewers Association.
Think of it, Tokushima Prefecture is called AWA NO KUNI, and has a background of people living there since ancient times, growing crops, and developing a unique culture.
Therefore, I came to mind that the AWA ODOLI dance festival is known as the originate in Tokushima area.
I know, Festival means drinking sake and dancing, so It makes sense that there are many breweries in Tokushima Prefecture.
Introducing Soy sauce and DASHI culture dinner

SASHIMI horse mackerel

Simmer DAIKON radish and chicken meatballs
how to cook 4 servings
about 500g = 1lb DAIKON radish, peel and cut into bite size
8 balls frozen chicken meat balls
3 tbs MILIN(cooking wine available)
1 tbs sugar
3 tbs soy sauce
1 tsp DASHI broth powder
50 ml water (I’m using anhydrous type of pot)
Put all ingredients into pot then cover
Slow heat about 10 minutes until cooked DAIKON
If you use wine instead of MILIN, add sugar to suit your taste.
Turn off heat, the pot stays a while in kitchen, it will soy sauce flavor come into DAIKON when the temperature drops.
Reheat before eating.
