Kaliho brewery, Akita prefecture
This Kaliho brewery is known for brewing dry sake, but I felt sweetness in this Hyakuden. It matured enough would go well with any dishes.
I had a fun shopping time in tasting sale event at regular local liquor store.
And I was able to ask various questions for the person who work sales department Akita Seishu company.
Keeping traditional method and creating new technologies
This is made from a new rice kind Hyakuden registered in 2020.
It feels me to special this sake to brewed using a patent-pending process.
The other hand, they use classic style of squeezing way.
It’s called HUNE-SHIBOLI, and it’s taking a time and needs human labor also.
Once the sake is done fermentation, the next step is remove solids from this liquid.
In Kaliho brewery put MOLOMI liquid placed in a boat-like flat box and slowly and gently pressed with the sensibility of master brewer, instead of automatic filter press machine.

In 2022, little white bird which live in Hokkaido area are very popular in Japan.
We are fascinated by cute birds and enjoy shared various products and pictures.
I enjoy decorating food sometime, so I tried to copy it.
Tuna and Shrimp avocado on top, so that even people who don’t like SASHIMI could try it.
