IWAONO-IZUMI Junmai Gingjo

Shimizu brewery, Kanagawa prefecture

It feels fruitier aroma compared with GENSHU, rich rice taste.
When I visited the SHIMIZU brewery the other day, I also bought this Ginjo Junmai.

I wrote that the oldest brewery in Kanagawa Prefecture. Shimizu brewery is located a corner of the old townscape close by Lake Tsukui.
Groundwater of the Tanzawa Mountains is used for sake brewing.What mean is the brand name of sake, IWAONO-IZUMI? “IWAONO-IZUMI” is meaning A spring that springs up from between the rocks.

Hope to continue making traditional style sake

I read a newspaper which the brew master answered interview.
Mr. Shimizu says family motto is “politely made, courteous trade”.
And he says that proud to be the oldest brewery, but also nervous about keeping traditions for future.

I believe that they will continue to make delicious sake, I know they are faithful brewers.
