I just learned the deliciousness of sake, so enjoyed fresh, drunk within a year, don’t know the taste of ageing sake.
However, since this a half of year aged sake had a calm taste, I was also interested in the matured taste after over a year.
Cave ageing sake
The brewery makes aged sake for owners that contract between 5 to 20 years.
This ageing’s sake is stored in a cave. It is the perfect natural resource for aging sake to keep annual temperature is around 10°C, no sunlight.

Cave dug during World War II
This cave was toward to produce tanks but was never used for it.
and has not been used at all for a long time.
In 2007, The cave was reborn as an aging cellar by the owner of Shimazaki Sake Brewery.
Now a days, it is designated as a modern cultural heritage site of Nasukarasuyama City.
