The oldest brewery in Kanagawa Prefecture. Shimizu brewery was established 1751.
The brewery continues to be brewing traditional methods that have been around since the Edo period.
What is GENSHU sake types
Most sake on the market has had alcohol content adjusted 15-16% through dilution with water, but GENSHU is undiluted sake, its alcohol content is often quite high, at 18-20%.
When I visited the brewery, the lady recommended me to drink it on the rocks as high alcohol content 18-19%.
The way of drinking is good for hot summer season.
Sake categories
I’m always confused about categories of sake, so I organized my thoughts and made note.
First, it comes dividing into TOKUTEI MEISYO-SYU and FUTSU-SYU.
